When it's season, we gather around a table to peel the aubergines, one by one. Depending on availability, we prefer to cut them à la julienne - but not too thin - or into round slices. Still raw, we season them with the other ingredients, according to the instructions and supervision of the grandmother.
Served at the table, as a welcome, our aubergines in oil they are one of the reasons to be together, well.
The aubergines in oil, like all our products, are processed fresh in our cannery.
